Mushroom Salad with Basil Vinaigrette
Comments:
Unusual festive salad. Carrots add color. Be sure to make ahead of time.
Makes 6 servings.
Ingredients:
- 1/2 cup vinegar
- 1/2 cup olive or vegetable oil
- 2 Tbsp. chopped fresh basil or 1 tsp. dried
- 2 tsp. sugar
- 1/4 tsp. hot pepper sauce
- 2 garlic cloves minced
- 2 4/5 oz. jars Green Giant whole mushrooms
drained
- 1/2 red onion thinly sliced (optional)
- 6 cups torn salad greens (romaine and bibb lettuce)
- 1/2 cup grated carrot
Directions:
In medium bowl, combine all vinaigrette ingredients (vinegar through garlic).
Blend well. Add mushrooms and onion. Cover and refrigerate at least 2
hours.
Place salad greens and carrots on salad plates. Top with
mushrooms and onions. Spoon vinaigrette over salads. ---------------------
