Mushroom Salad with Basil Vinaigrette

Unusual festive salad. Carrots add color. Be sure to make ahead of time. Makes 6 servings.

Ingredients:

  • 1/2 cup vinegar
  • 1/2 cup olive or vegetable oil
  • 2 Tbsp. chopped fresh basil or 1 tsp. dried
  • 2 tsp. sugar
  • 1/4 tsp. hot pepper sauce
  • 2 garlic cloves minced
  • 2 4/5 oz. jars Green Giant whole mushrooms drained
  • 1/2 red onion thinly sliced (optional)
  • 6 cups torn salad greens (romaine and bibb lettuce)
  • 1/2 cup grated carrot

Directions:
In medium bowl, combine all vinaigrette ingredients (vinegar through garlic). Blend well. Add mushrooms and onion. Cover and refrigerate at least 2 hours.

Place salad greens and carrots on salad plates. Top with mushrooms and onions. Spoon vinaigrette over salads.
