Marsala Glazed Mushrooms

Marsala! Makes 4 servings.

Ingredients:

  • 6 tsp. margarine (divided use)
  • 1 lb. mushrooms, cleaned and thinly sliced
  • 1/4 tsp. salt
  • Freshly ground black pepper to taste
  • 1 medium shallot peeled and minced
  • 1/2 cup Marsala
  • 1/4 tsp. dried rosemary
  • 1 Tbsp. minced fresh parsley

Directions:
In a large heavy skillet, heat 1 tsp. margarine over medium high heat. Add one third of the mushrooms and quickly saute just until softened and lightly browned. Sprinkle lightly with salt and pepper. Remove from the pan and place on a paper towel-lined plate. Repeat with the other mushrooms, using a tsp. margarine for each batch.

Heat 1 tsp. margarine in the pan and saute the shallot and garlic 30 seconds. Add the marsala and rosemary; bring to a boil and continue to boil until thickened. Stir in the remaining 2 tsp. margarine. Add the mushrooms and parsley, stirring to coat. Adjust the seasonings and serve.
