Greek Salad with Walnuts
Comments:
You can make a great lite dinner out of this. For feta fans! Makes 3 large
servings.
Ingredients:
- 1 pkg (10 oz.) mixed salad
greens
- 1 cup ripe olives
- 3 plum tomatoes, cut into wedges
- 1 small red onion thinly sliced
- 1/2 medium cucumber, peeled cut into wedges
(optional)
- 1/2 cup coarsely chopped walnuts
- 1 8 oz. pkg. crumbled feta cheese
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
(1 lemon yields 1/4 cup juice)
- 1 clove garlic minced
- 1 tsp. oregano dried
- 1/4 tsp. pepper
- 1/4 tsp. salt
Directions:
Toss greens, olives, tomatoes, onion, and cucumber.
Toast walnuts in a large non-stick skillet on medium-high
heat 5 minutes, stirring constantly.
Mix oil through salt in small bowl and toss with salad
mixture. Spoon into serving bowl. Sprinkle cheese and walnuts over salad. ---------------------
