Greek Salad with Walnuts

You can make a great lite dinner out of this. For feta fans! Makes 3 large servings.

Ingredients:

  • 1 pkg (10 oz.) mixed salad greens
  • 1 cup ripe olives
  • 3 plum tomatoes, cut into wedges
  • 1 small red onion thinly sliced
  • 1/2 medium cucumber, peeled cut into wedges (optional)
  • 1/2 cup coarsely chopped walnuts
  • 1 8 oz. pkg. crumbled feta cheese
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice (1 lemon yields 1/4 cup juice)
  • 1 clove garlic minced
  • 1 tsp. oregano dried
  • 1/4 tsp. pepper
  • 1/4 tsp. salt

Directions:
Toss greens, olives, tomatoes, onion, and cucumber.

Toast walnuts in a large non-stick skillet on medium-high heat 5 minutes, stirring constantly.

Mix oil through salt in small bowl and toss with salad mixture. Spoon into serving bowl. Sprinkle cheese and walnuts over salad.
