Avocado Salad

Comments:
Very quick. Makes 6-8 servings.

Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1 large avocado, peeled and chopped
  • 1 medium onion chopped
  • 1 large tomato chopped
  • 1 medium head romaine lettuce, shredded

Directions:
Combine first 5 ingredients in a bowl and mix well. Combine avocado, onion and tomato. Add dressing; cover and chill 3 minutes. Using a slotted spoon, spoon onto a bed of lettuce.
