Tortilla Soup

Comments:
Another of mum’s famous recipes -- very popular for a casual dinner party! A great hot meal for a cold night. Can be made vegetarian by using vegetable stock instead of chicken stock. Makes 4-6 servings.

Ingredients:

  • 1 onion chopped
  • 1 clove garlic minced
  • 1 jalapeno chopped (optional)
  • 1 14 oz. can tomatoes (diced)
  • 4 cups chicken stock
  • 1 tsp. cumin
  • 1/2 tsp. lemon pepper
  • 1 can tomato soup
  • 1 tsp. chili powder
  • 2 tsp. Worcestershire sauce
  • 1 can whole kernel corn, drained
  • 1 can kidney beans, drained
  • 1-2 avocados
  • 1+ cup shredded cheddar cheese
  • 20 or so tortilla chips crushed slightly

Directions:
Saute onion through tomatoes in large skillet.

In separate large soup pan combine chicken stock, cumin, lemon pepper, tomato soup, chili powder, worcestershire. Add tomato mixture, corn and beans. Simmer 1 hour stirring occasionally. If soup gets too thick add a little water.

10 minutes before the soup is ready, put in each bowl: 3 avocado slices, small handful tortilla chips, and 2 Tbsp. cheddar cheese. Pour soup over. If you really like cheese add some more on top!
