Armenian Shish Kebab
Comments:
Great summer cookout. Makes 4-6 servings.
Ingredients:
- 1/2 cup oil
- 1/4 cup lemon juice
- 1 tsp. salt
- 1 tsp. marjoram
- 1 tsp. thyme
- 1/2 tsp. pepper
- 1 clove garlic, minced
- 1/2 cup chopped onion
- 1/4 cup snipped fresh parsley
- 2 lb. boneless beef (rib-eye steaks) cut in
1" cubes
- 2 green peppers quartered
- cherry tomatoes
- mushrooms
- any other veggies desired
Directions:
Mix ingredients oil through parsley in deep bowl. Add cubed beef and veggies;
stir to coat. Cover and refrigerate overnight OR let stand at room temperature
2-3 hours. Turn meat occasionally.
Fill skewers alternating meet and veggies. Broil over
hot coals, turning frequently and brushing with leftover marinade or melted
butter. ---------------------
