Armenian Shish Kebab

Great summer cookout. Makes 4-6 servings.

Ingredients:

  • 1/2 cup oil
  • 1/4 cup lemon juice
  • 1 tsp. salt
  • 1 tsp. marjoram
  • 1 tsp. thyme
  • 1/2 tsp. pepper
  • 1 clove garlic, minced
  • 1/2 cup chopped onion
  • 1/4 cup snipped fresh parsley
  • 2 lb. boneless beef (rib-eye steaks) cut in 1" cubes
  • 2 green peppers quartered
  • cherry tomatoes
  • mushrooms
  • any other veggies desired

Directions:
Mix ingredients oil through parsley in deep bowl. Add cubed beef and veggies; stir to coat. Cover and refrigerate overnight OR let stand at room temperature 2-3 hours. Turn meat occasionally.

Fill skewers alternating meet and veggies. Broil over hot coals, turning frequently and brushing with leftover marinade or melted butter.
