Mocha Chip Cheesecake

Mocha and chocolate! Makes 9 servings.

Ingredients:

  • 1/3 cup coconut
  • 1(11 oz.) pkg. cheesecake mix
  • 1/3 cup margarine or butter, melted
  • 1-1/4 cups milk
  • 2 tsp. instant coffee crystals
  • 1/2 cup dairy sour cream
  • 1/2 cup mini semi-sweet chocolate chips

Directions:
In small mixing bowl, combine coconut and crust crumbs from the cheesecake mix. Add melted margarine or butter; toss to combine. Press mixture onto the bottom of a 2-quart square baking dish.

In small mixer bowl, combine milk and instant coffee crystals; stir until crystals dissolve. Add filling mix from the cheesecake mix; beat with an electric mixer just until combined. Add sour cream; beat on high speed for 3 minutes. Stir in 1/4 cup of the chcoclate chips.

Pour the cheesecake mixture into the dish atop the crumb layer. Sprinkle remaining chocolate pieces on top. Cover and chill in the freezer for 15 minutes. Or cover and refrigerate 30 minutes to 24 hours. To serve, cut into squares.
