Savory Feta Cheese Log with Toasted
Walnuts & Olives
Comments:
This one is more complex than the mix and serve dips, but it makes a nice
presentation and is worth the effort. Serve with assorted crackers. Makes
1-1/2 cups.
Ingredients:
- 1 (8 oz.) package feta cheese, crumbled
- 4 oz. cream cheese, softened
- 1 small clove garlic minced
- 2 Tbsp. olive oil
- 1/4 cup chopped ripe olives (I usually leave these
off)
- 2 Tbsp. sliced green onions
- 1/2 cup chopped walnuts
Directions:
Mix feta cheese, cream cheese and olive oil with electric mixer on medium
speed until well blended. Add olives, onions and garlic; mix well.
Toast walnuts in a large nonstick skillet on medium-high
heat 5 minutes stirring constantly; cool.
Shape feta mixture into a 10 inch long log (mix will
be soft); roll in walnuts. Wrap in plastic wrap. Refrigerate. Remove plastic
wrap to serve.
