Artichoke & Spinach Dip
Comments:
Great starter for a small dinner party. Very easy and tasty. You can even
mix it up ahead of time and refrigerate until you're ready to bake it.
Goes great with Melba crackers and vegetables. Makes 2.5 cups.
Ingredients:
- 1 (14 oz.) can
artichokes, drained & chopped
- 1 cup chopped fresh spinach
- 1/8 cup Italian style bread crumbs (I add a
little more)
- 1 cup mayonnaise (I sometimes use lite mayo)
- 1/2 cup freshly grated Parmigiano Reggiano
- 1/2 teaspoon garlic
- 1/2 teaspoon black pepper
Directions:
Preheat oven to 400 F. In a large mixing bowl, combine all ingredients.
Stir to mix well. Place in 3-cup ovenproof casserole or souffle dish and
bake 8-10 minutes. (Spinach should be tender.)
