Tex-Mex Seven Layer Dip

This one is a crowd-pleasing classic. Festive presentation. Serve with tortilla chips. Makes a lot.

Ingredients:

Layer 1:

  • 2 10-1/2 cans bean dip

Layer 2:

  • 3 avocados, peeled and seeded
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt

Layer 3:

  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 pkg taco seasoning mix

Layers 4-7:

  • 1 bunch green onion sliced
  • 3 tomatoes seeded and chopped
  • 2 (3-1/2 oz.) cans ripe olives chopped (optional)
  • 8 oz. sharp cheddar cheese grated

Directions:
Spread bean dip on large platter or in 9x13 pyrex dish. Combine layer 2 ingredients in food processor until smooth (or mash together with fork). Spread avocado mixture over bean dip. Mix layer 3 ingredients together and spread over avocado mixture. Sprinkle with onions, tomatoes, olives and cheese. Chill and serve chilled or at room temperature.
